INSTANT POT CHICKEN AND GNOCCHI SOUP

It’s a bowl full of creamy, savory flavor with onion, celery, carrots, shredded chicken, gnocchi, bacon, and spinach. I think gnocchi should always be in soup – it just belongs. The chicken and gnocchi would be just fine on their own but the bacon and garlic spinach really bring it all together at the end. One of the most unique and best parts about this soup is how much healthier it is than you think it is.


When you take a bite, you think you’re treating yourself to a glutinous bowl of butter and cream. In actuality, you mix in evaporated milk and water combined with cornstarch to thicken the soup without splurging in excess fat. This is the kind of trick I go around bragging to everyone about and normal people don’t care and wish I were done explaining how I make my soup because I’m boring them to death while the foodies stop me and ask for exact details. I love finding the foodies.

INSTANT POT CHICKEN AND GNOCCHI SOUP RECIPE



INGREDIENTS

  • 1 lb boneless skinless chicken breasts
  • 2 cups mirepoix (chopped onion, celery, and carrots)
  • 4 cups chicken broth
  • 1 cup water
  • 2 tsp dried basil
  • 2 tsp Italian seasoning
  • 1 tsp poultry seasoning
  • 1 tsp salt
  • 3 tbsp cornstarch dissolved in 2 tbsp water
  • 2 12 oz cans evaported milk
  • 2 packages gnocchi
  • 6 slices bacon
  • 3 garlic cloves, minced
  • 5 oz fresh spinach 

INSTRUCTIONS

  1. Place the chicken, broth, mirepoix, water, basil, Italian seasoning, poultry seasoning, and salt into Instant Pot
  2. Seal and cook on manual setting for 25 minutes
  3. Quick release then remove lid
  4. Shred the chicken then return it to the Instant Pot
  5. Change the Instant Pot over to the slow cooker setting
  6. Add the cornstarch/water mixture, evaporated milk, and gnocchi
  7. Stir, reseal the Instant Pot and cook for another 45-60 minutes until soup has thickened and the gnocchi has softened
  8. During this time, fry bacon in a pan
  9. Remove bacon from pan and let it dry on a plate with paper towels to soak up grease
  10. Drain the bacon grease until there is only a little bit left
  11. Saute the garlic and spinach in the pan and excess grease until the spinach is wilted
  12. Chop up the crispy bacon
  13. Once the soup is done, stir in the bacon and garlic spinach and enjoy!
