Bhindi Bhaji

Ever heard of bhindi bhaji? It is an okra based Indian dish that can be served as a main course or as a side dish. Find out how to cook with okra and learn how to get best results. INGREDIENTS
30ml (2 tbsp) vegetable oil
5ml (1 tsp) cumin seeds
1 onion, peeled and finely chopped
4 garlic cloves, peeled and crushed
1 green chilli, washed and finely chopped
450g (1lb) okra
2.5ml (½ tsp) turmeric
2.5ml (½ tsp) chilli powder
2.5ml (½ tsp) garam masala
5ml (1 tsp) ground coriander
2 tomatoes, washed and chopped
Salt, season to taste

INSTRUCTIONS
1. Fry the cumin seeds in the oil until they turn slightly darker in curry and release their aroma.
2. Add the onion, garlic and chilli and fry until softened and slightly browned.
3. Add the okra and stir while frying.
